CULINARY USES

Leaf, tender stem, green seedpod: raw in salad, pesto, dip, dressing; cooked in soup, fish topping, meat loaf, beverage
Flower: raw in salad, butter, as garnish
Qualities - sour, slightly sweet, refreshing, high in vitamin C, cooling, astringent
