I first heard about parsley wine in early 2020 in a post by Matthew Wood about dealing with the breathlessness that can present with COVID-19. He advised making Hildegard of Bingen's parsley wine as parsley can be quite effective for breathlessness. (That was also my introduction to Hildegard of Bingen, whom I have found myself intrigued with since then).
I made up a batch of the parsley wine last week and thought I would share this information in case anyone else might be interested in making some before the parsley freezes later this week. It's surprisingly tastty! I did follow the recipe since it was my first time making it, but will likely let the infused wine cool below 100 degrees F before adding the raw honey next time.
